  • Margarita

    • 2 ounces tequila
    • 1 ounce Cointreau
    • 1 ounce lime juice

  • Chipotle-Lime Crema

    Ingredients

    • 1/2 cup Greek yogurt
    • 1 chipotle pepper in adobo sauce
    • 1 tablespoon lime juice
    • 1/2 teaspoon coarse sea salt

    Instructions

    1. Mix all ingredients in blender. Blend until smooth. Add may 1 tablespoon at a time as needed.
    2. Chill in fridge.

  • Cilantro Lime Chicken

    Ingredients

    • 1 cup chopped cilantro, plus more for garnish
    • 1/4 cup chicken broth (or water)
    • 1/4 cup olive oil
    • 2 tablespoons lime juice (about 1 lime)
    • 1 teaspoon salt
    • 2 cloves minced garlic
    • 1 teaspoon onion powder
    • 1/2 teaspoon ground cumin
    • 3 pounds chicken thighs

    Instructions

    • Add all ingredients except chicken in a small bowl. Whisk to combine.
    • Marinade chicken between 2 hours & overnight in refrigerator.
    • Bake in oven at 400°F for 30-40 mins until done or grill.

    Original recipe called for 2 teaspoons salt & 1 tbsp honey. From Isabel Eats.

  • Pollo Asado

    Ingredients

    • 1/4 cup orange juice (about 1 medium orange)
    • 2 tablespoons olive oil
    • 1 tablespoon lime juice (about 1/2 lime)
    • 1 tablespoon white wine vinegar
    • 1 tablespoon achiote powder
    • 1 tablespoon ground coriander
    • 1 tablespoon coarse kosher salt
    • 1 tablespoon minced garlic (about 3 cloves)
    • 2 teaspoons smoked paprika
    • 2 teaspoons dried Mexican oregano
    • 1 teaspoon ground black pepper
    • 1 teaspoon ground cumin
    • 1/8 teaspoon ground cloves
    • 2-3 pounds chicken thighs or legs

    Instructions

    1. Make the marinade: Add all ingredients except chicken in a small bowl. Whisk to combine.
    2. Marinate: Place chicken in a large gallon size ziploc bag and add the marinade. Close the bag, massage together to coat all the chicken and refrigerate for 2 to 6 hours. (Do not marinate longer than 8 hours or the chicken will get tough and begin to break down.)
